A Chef De Partie is responsible for consistently preparing innovative and creative dishes of the highest quality, presentation, and flavor for the dining rooms, banquets and other food-related facilities, resulting in outstanding guest satisfaction. They are also responsible for the smooth running of the kitchen and should keep an eye on profit, stock levels, wastage control, hygiene practices and training within the kitchen department.
Key responsibilities
- Ensure that all stocks are kept under optimum conditions.
- Ensure that all mise-en-place is always freshly prepared and on time.
- Prepare all cold and hot food items for buffet, banquet and restaurant according to standard recipes.
- Ensure appearance of all cold and hot food for proper color combination and overall presentation to maintain appeal.
- Ensure that all dishes are being prepared in the correct quantity.
- Ensure that all dishes reach the hot plate and pass to the restaurant hosts in the correct portion size, and are presented on the prescribed serving dish with appropriate garnishing.
- Ensure that junior cooks and trainees receive the right training and optimum guidance.
- Supervise the sanitation, cleanliness, hygiene as well as the quality level of product and services.
